The only way to lose merchants is to disband them, but obviously that isn't what you have done.
I would suggest going to support.strongholdkingdoms.com and submitting your ticket there.
I hope you can get your issue resolved.

Sometime it can be just an issue of relogging into the game.
It can happen that they dont show and yet they are there it can happen with troops and even monks.
Other times with merchants it could be you just forgot you sent them really really far away and they have not come back yet. Check the merchant submenu where you can see attack sent and attacks incoming, you can also check merchants and monks there.
